Vegetarian Avocado and Pesto Pasta

  1. 1 1/2 cups pine nuts or walnuts
  2. 1 bunch basil
  3. 2 cloves garlic
  4. 1/2 teaspoon sea salt or kosher salt
  5. 1/4 cup parmesan cheese
  6. 2 to 4 tablespoons olive oil
  7. 1 avocado, diced into about 1-inch (bite-sized) cubes
  8. About 10 ounces pasta, any kind
  9. Extra sea salt or kosher salt and fresh ground black pepper, to taste


  1. Gather the ingredients. ​
  2. First, prepare your pesto. You can also skimp and just use a store-bought jar of pesto, but it's so much cheaper, fresher, and tastier to make your own. To prepare the pesto, place the pine nuts or walnuts, basil, garlic, sea salt or kosher salt and Parmesan cheese in a blender or food processor and pulse together a few times. ​
  3. Slowly add the olive oil and blend until you have a nice, smooth consistency. You may need to add a little bit more or less olive oil to get the perfect texture. ​
  4. Next, cook the pasta according to the package instructions, or however you like to cook your pasta. Drain well.  ​
  5. Next, combine it all. Toss the prepared pasta with your prepared pesto until well combined, then gently toss together with the diced avocado, being careful not to break up the avocado.  ​
  6. Finally, give it another little sprinkle of sea salt or kosher salt and fresh ground black pepper to serve. ​
