Roasted Bok Choy

  1. 12 ounces baby bok choy (cut in half lengthwise)
  2. 2 tablespoons olive oil
  3. Ground black pepper (to taste)
  4. 1 teaspoon sesame oil
  5. 1 tablespoon soy sauce
  6. 1 teaspoon red wine vinegar
  7. 1 teaspoon sugar
  8. 1 teaspoon toasted sesame seeds


  1. Gather the ingredients. Preheat oven to 400 F.
  2. Place bok choy on a rimmed baking sheet. Drizzle with olive oil and a few grinds pepper.
  3. Bake until stalks are tender, 6 to 8 minutes.
  4. Meanwhile, in a small bowl, combine the sesame oil, soy sauce, vinegar, and sugar. Whisk to blend.
  5. Put bok choy on a platter or serving dish, spoon dressing over and sprinkle sesame seeds on top. Serve immediately.


  1. The stalks are prone to grit, much like leeks, so be sure to clean boy choy thoroughly before cooking.
  2. The simplest way to prep bok choy is cut it in half lengthwise, and rinse in a bowl of water to loosen any dirt or grit.
  3. Make it a meal by adding hot, steamed rice and leftover roasted chicken, tofu, or a soft-boiled egg.
