Ranger Cookies With Oats, Cereal, and Coconut

Ingredient

  1. 1 cup shortening (or butter at room temperature)
  2. 1 cup granulated sugar
  3. 1 cup brown sugar
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. 2 cups all-purpose flour
  7. 2 teaspoons baking soda
  8. 1 teaspoon baking powder
  9. 1/2 teaspoon salt
  10. 2 cups corn flakes
  11. 2 cups quick cooking oats
  12. 1 cup coconut flakes
  13. Optional: 1 cup semisweet chocolate chips

Instruction

  1. Gather the ingredients.
  2. Heat the oven to 350 F. Line a large baking sheet with parchment paper or a silicone baking mat, or grease the baking sheet.  
  3. In a large mixing bowl, cream shortening and sugars until light and fluffy.
  4. Add eggs and beat until well blended and smooth.
  5. Beat in the vanilla.  
  6. Combine flour, baking soda, baking powder, and salt in a separate bowl and stir to blend thoroughly.
  7. Add the flour mixture to the creamed mixture.
  8. Stir in cornflakes, oats, coconut, and chocolate chips, if using.
  9. Drop by cookie scoop or spoonfuls onto the prepared baking sheet.
  10. Bake at 350 F for about 12 to 14 minutes
  11. Serve and enjoy!.
