Lotus Root Soup with Pork Ribs

  1. 500 g pork ribs
  2. 2 sections lotus root (around 1000g) , peeled and cut into large chunks
  3. 1 thumb ginger , smashed
  4. 2 tbsp. peanuts
  5. 4 L water ,
  6. 2 tsp salt , or to taste
  7. coriander or scallion , finely chopped for garnishing


  1. Clean the ribs under running water and then soak the ribs in clean water for 30 minutes. Change the water 2 times. Drain and set aside.
  2. Rinse peanuts under running water.Wash the lotus root and peel off the skin and cut into large chunks. Add peanuts, ginger and lotus root chunks into the stew pot. Add water in and cook a soup or bones procedure (around 40 minutes)
  3. When you are ready to serve add salt to taste and cover the lid and stand for another 10 minutes. Serve with coriander or scallion.

  2. Salt should be added a the very end before serving. After add salt, cover the lid and stand for 10 minutes before serving.
  3. High quality ribs should be soaked in clean water for at least 3 minutes with 2-3 batches of clean water until most of the blood water is removed. You can also try to blanch the ribs in boiling water. But from personal experiences, directly cooked ribs are tender than blanched ones.
