Lotus Root salad

Ingredient

  1. 2 sections of lotus root
  2. 1/4 tsp. rice vinegar or lemon juice
  3. Sauce I

  4. 2 fresh Thai red peppers
  5. 2 fresh green chili peppers
  6. 2 garlic cloves chopped
  7. 2 tsp. chopped ginger
  8. 1/4 tsp. sugar
  9. 2 tbsp. light soy sauce
  10. 1/2 tbsp. black vinegar
  11. 1/2 tbsp. chopped scallion
  12. 2 tbsp. vegetable cooking oil
  13. 1 small bunch of coriander
  14. Sauce II

  15. 1 tbsp. light soy sauce
  16. 1/2 tbsp. sesame oil
  17. 2 garlic cloves chopped
  18. 2 tsp. chopped ginger
  19. 1/4 tsp. sugar
  20. 1/2 tbsp. black vinegar
  21. 1-2 tbsp. LaoGanma chili sauce or Chinese red oil

Instruction

  1. Remove the joining part, peel the lotus root and then thinly sliced.
  2. Wash the slices under running water to remove the extra starch. This step can make the slices crunchier.
  3. Bring a large pot of water to a boiling and then blanch lotus root slices for 1 minutes. Transfer out and soak the slices in chilled water until completely cooled. Drain.
  4. Salad with sauce I
  5. Drizzle light soy sauce, sugar, vinegar on the slices.
