Healthy Kale Quinoa Salad

  1. 4 cups hot cooked quinoa
  2. 4 cups roughly chopped kale leaves (1 5-ounce package)
  3. 1/2 cup minced onion
  4. 3 tablespoons extra virgin olive oil
  5. 2 tablespoons fresh lemon juice
  6. 1 tablespoon white wine vinegar
  7. 2 teaspoons Dijon mustard
  8. 1 teaspoon minced garlic
  9. Salt and pepper to taste


  1. In a large bowl, or the pot that you cooked the quinoa in, mix the quinoa with the kale until well combined. Allow it to sit for about 3 minutes so the kale wilts a bit.
  2. In a small container mix the onion, olive oil, lemon juice, vinegar, Dijon mustard, garlic and salt and pepper.  Pour the dressing over the quinoa mixture, and toss to blend well.  If you have time, line a rimmed baking sheet with aluminum foil and spread out the quinoa salad so that it cools quickly and evenly.  Serve in a bowl, at room temperature.
