Eggs Over Easy

  1. 1 large egg
  2. 2 teaspoons unsalted butter (or oil)
  3. Dash kosher salt (or to taste)
  4. Dash black pepper (or to taste)

  2. Melt the butter in a nonstick skillet over medium-low heat. Diana Rattray
  3. Crack the egg into a small bowl or ramekin. When the butter is sizzling, slide the egg into the pan. Diana Rattray
  4. Cook the egg until the bottom is firm enough to flip easily. Diana Rattray
  5. Slide a spatula under the side of the egg with the yolk. Gently turn the egg over and let it cook for about 8 to 10 seconds longer. Diana Rattray Diana Rattray
