Easy Spoonbread

Ingredient

  1. 1 cup cornmeal (white)
  2. 2 cups water
  3. 1 teaspoon salt
  4. 1 cup milk (cold)
  5. 2 large eggs (well beaten)
  6. 2 tablespoons melted butter

Instruction

  1. In a large saucepan, combine cornmeal with 2 cups of water.
  2. Add 1 teaspoon of salt.
  3. Bring mixture to a boil.
  4. Then lower the heat and cook, stirring constantly, for 5 minutes.
  5. The mixture will be very stiff. Remove from heat and slowly stir in 1 cup of cold milk.
  6. Stir in the beaten eggs and melted butter.
  7. Preheat oven to 400 F.
  8. Heat a greased 1 1/2 to a 2-quart baking dish or 8-inch square baking dish.
  9. Pour the well-blended batter into the hot baking dish.
  10. Bake for about 40 minutes or until firm in the middle and nicely browned.
  11. Serve hot, straight from the baking dish.
