Easy Baked Polenta With Parmesan Cheese

  1. 4 cups water (divided)
  2. 1 teaspoon salt
  3. 1 cup yellow polenta (or grits)
  4. 1/2 cup butter (melted)
  5. 1/2 cup fresh Parmesan cheese (grated)


  1. Gather the ingredients.
  2. Butter a 7 1/2-by-4 1/2-inch loaf pan and set aside.
  3. In a medium-sized bowl, stir together 1 cup cold water, salt, and polenta meal.
  4. Using the top of a double boiler, bring 3 cups of water to a boil over direct heat.
  5. Then, stir in the cornmeal mixture to the top of the double boiler gradually and cook for 5 minutes.
  6. While that is cooking, take the bottom portion of the double boiler and add just enough water to hit the top portion when inserted. Bring to a boil, reduce heat, and keep at a simmer.
  7. Next, place the top of the double boiler, over the bottom of the double boiler and cook for an additional 4 minutes, stirring often.
  8. Pour the cooked polenta into the prepared loaf pan and chill until firm.
  9. Preheat the oven to 350 F. 
  10. While the oven is heating, remove the chilled polenta from the loaf pan and slice with a sharp knife.
  11. Place slices on a greased shallow baking dish, overlapping the slices.
  12. Pour the melted butter over the polenta and sprinkle with the Parmesan.
  13. Bake in the preheated oven, uncovered, for 20 minutes.
  14. Serve the polenta as a replacement for potatoes or rice and enjoy.
