Curried Chicken Salad With Diced Apple

Ingredient

  1. 6 boneless chicken breast halves, skin removed, cooked and diced, about 3 cups
  2. 1 cup chopped celery
  3. 1/2 cup red apple, unpeeled and diced
  4. 2 to 3 tablespoons raisins
  5. 1/4 cup coarsely chopped pecans or peanuts
  6. 1 teaspoon curry powder
  7. 1/2 teaspoon salt
  8. 1 teaspoon cider vinegar
  9. 1/2 teaspoon freshly ground black pepper
  10. 1/8 teaspoon ground cayenne pepper
  11. 1 cup mayonnaise, or enough to moisten to your taste
